The other day I made a recipe from Betty Crocker's website: Lemon Lover's Cupcakes with Lemon Buttercream Frosting. Being a lemon lover I was QUITE disappointed with this recipe. The cupcakes are made with a yellow cake recipe with 2 TBSPs of lemon rind added to it... That's it! I mixed in 2 TBSPs of lemon juice into the cake batter's water measurement but still the cupcake was a let down. If this is supposed to be a Lemon Lover's dreamy cupcake then why on earth isn't Betty Crocker using a Lemon cake as it's base? The icing was very good; I added more lemon juice as well as some lemon extract.
You can believe that if I try this recipe again that I'll be using the Duncan Hines Lemon Cake mix I bought rather than BC's Yellow Cake mix.

Wow! I can't believe I forgot to take a picture of the cupcakes! Too sad! I sent the remainder of the cupcakes to work with hubby. Staff enjoyed them and they were much appreciated. :)
